Carbonated Clear Whey Drinks Aim to Enhance Protein Beverage Market
The introduction of carbonated clear whey beverages represents a significant advancement in the protein drink sector. OSF Flavors has unveiled a new formulation designed to tackle the sensory challenges associated with these products, such as taste, texture, and stability, which are crucial for consumer acceptance.
OSF Flavors' solution utilizes a flavor-masking system integrated with a unique application architecture tailored for clear whey-based carbonated protein drinks. This system is designed to interact directly with taste receptors to reduce the perception of bitter peptides, thus avoiding the reliance on simply overlaying flavors or increasing sweetness, which can lead to overly sweet products.
A critical component of this development is the creation of aroma systems that are compatible with low pH beverages. These systems aim to maintain a clean flavor profile even in high carbon dioxide environments, preventing undesirable changes in aroma volatility and ensuring that the flavors complement rather than compete with the protein's residual profile.
The formulation also takes into account mouthfeel perception, which often suffers when whey proteins are utilized in carbonated drinks. Pierre Battu, Managing Director for Asia at OSF Flavors, notes that whey protein is a preferred choice for transparent protein drinks due to its complete amino acid profile, high bioavailability, and good solubility in low pH conditions.
However, Battu acknowledges the sensory challenges that whey protein presents in carbonated beverages, such as bitter peptide expression, astringency, mouthfeel degradation, and persistent residual taste. Traditional masking methods frequently fall short because they are typically designed for conventional dairy matrices or opaque protein drinks.
This new formulation approach by OSF Flavors highlights the need for specific solutions tailored to the unique challenges of carbonated clear whey protein drinks, rather than relying on conventional methods like increasing sweetness.
