Preparing Tropical Blueberry Smoothies for a Nutritious Start
Jackie Sobon's cookbook, Vegan Yack Attack’s Plant-Based Meal Prep, provides a practical approach to meal-prepping smoothies, emphasizing convenience and nutrition. The recipe involves creating smoothie jars that can be prepared in advance and stored in the freezer. Each jar contains a mix of ingredients that, when blended, produce a nutritious drink.
To prepare these smoothies, five 24-ounce wide mouth jars are used. The ingredients are divided evenly among the jars, which include 2½ cups of frozen chopped spinach, 4 cups of frozen blueberries, 2½ cups of frozen pineapple chunks, 1 cup of hemp hearts, 1¼ teaspoons each of ground turmeric and ground ginger, and 5 small bananas. After the ingredients are placed in the jars, the lids are screwed on, and the jars are stored in the freezer for later use.
When ready to consume, a peeled banana is added to a blender, broken into chunks. The frozen jar is briefly run under warm water to loosen the contents, which are then poured into the blender, followed by ¾ cup of water. The mixture is blended until smooth and can be poured back into the jar for easy consumption on-the-go.
This method offers a straightforward solution for those seeking a quick, nutritious meal option that can easily fit into a busy lifestyle. The ingredients provide a blend of vitamins and nutrients, contributing to a healthy diet.
