Crush Dynamics Utilizes AI to Enhance Fermentation Efficiency
Crush Dynamics, a Canadian company specializing in agritech and food ingredients, has partnered with AI developer Atomic47 Labs to improve the efficiency of producing fermentation-derived flavors. By utilizing artificial intelligence, they aim to enhance their proprietary fermentation process, which uses residual materials from winemaking to create food ingredients. Michelle Cordeiro, director of R&D at Crush Dynamics, highlighted that the process is designed to extend shelf life, reduce sugar, and improve food formulation.
The collaboration enables the company to run real-time simulations to tailor their fermentation models, which is expected to lower energy consumption, improve product consistency, and increase production efficiency. This approach also supports the conversion of agricultural byproducts into valuable food ingredients, bolstering Canada's food manufacturing sector's sustainability and competitiveness.
Crush Dynamics is scaling its pilot facility in Summerland, British Columbia, to explore the use of residual materials from other crops, such as cherry, cranberry, apple, and avocado. The AI will help optimize these processes from end to end, providing predictive simulations and real-time adjustments to ensure the maximum use of residuals.
The project is supported by Protein Industries Canada, which is contributing $607,000 to the $1.4 million initiative. The remaining funding comes from Crush Dynamics and Atomic47 Labs. This AI endeavor is part of Canada’s broader strategy to enhance the plant-based food industry.
Minister of Industry Mélanie Joly noted that the automation of industrial fermentation facilitates Canadian companies’ competitiveness on the global stage, reduces waste, and advances sustainable food production, aligning with government initiatives to strengthen the national economy.
